Ninety-five percent of the wines are matured in vats to conserve the richness of the fruit, and only 5% are matured in barrels.  The oldest Syrah and Mourvèdre varieties - rich and concentrated - will go into the Cuvée Exigence. For the whites, the grapes from the oldest vines ferment in barrels in order to develop their complexity, mellowness (gras) and strength.
